The Gmail app won't let me attach a word-processing file. When I tap the attachment icon, the gallery pops up, so I can only attach pictures. Does anyone know how to attach a text file?

Download a file manager like Astro. (it's free in the play store.) if you already have a file manager you just need to clear your defaults in menu/settings/applications/manage applications/all/find the gmail app and then hit clear defaults.
