how do i delete a gmail on my nexus7

Hi, welcome to Android Forums.
I assume you mean a gmail account, the following is a link to the Nexus7 area where the answer was given previously :-

If you mean an email within your gmail app then go to your inbox, longpress the email you want to delete, an action bar will open with a bin icon, tap on this, the email will go into your bin. Go into your bin, longpress the mail to get the option to delete the email completely. You can leave emails in bin and they will auto delete after 30 days.
