I'm not sure if anyone knows, but Go Launcher just released their very own launcher built for Tablets. It's in 1.0 Beta 2, and I already see a performance increase off of the my rom over the stock launcher.
I'm using the DRH ICS rom, and I can say for sure that I have seen less lag in the launcher and higher customization from this! As development continues, I look forward to better performance.

They said it's for android 3.0+ tablets, but who knows, it could possibly run on some of the Gingerbread ROMs we see too! Anyone running 2.3 can comfirm this, I'd drop down to 2.3 in a heartbeat
