Ic3 just came out with a new rom this week v2.9, thats a great rom, ive gone towards tainted vanilla because its so stable. sense-able is a great ROM, be on the look out for Fresh 2.1.2 that comes out tmw!, white widow is awesome and the dev is on google wave release updates. r00t is great!
Reliable and newest don't go hand-in-hand; pick one or the other. To be sure, some of the ROMs that have gone through many revisions (e.g. Alosyius) are more bug free than their initial releases - but they are not necessarily bug free.
If you want reliable - meaning nearly bug free, crash free, and FC-free, pick something which is rooted, but very close to stock: either Ivanmmj's "Official 1.0 alpha", or Jcase's "Plain Jane". Both can be OC'd and have su, and seem to allow tethering to be set up easily. Neither have a2sd; the OC'ing in Plain Jane is likely to be more robust than than the early version of OC'ing in the "Official 1.0" kernel. But you will have a more bug-free experience with either of these ROMs than any other ROM available.
The fact that HTC/VZW do far more testing of the releases than the devs and their friends do means that the further a ROM strays from it's "factory" origins, the more problems you are going to experience; it really is that simple.
But, it's not like you are forced to use only one ROM, and you will be stuck with that decision forever. It is a good idea to have a backup ROM available (as a Nandroid backup) for those times when you "just want your phone to work, no exceptions". That way, if you are fooling around with an experimental or new ROM, you can save it, and then quickly wipe & restore back to something you have 100% confidence in - something that "just plain works the way you expect it to".
