It's always bothered me that the recent places weren't the most recent places you've visited. I'm not sure what order they are put in, but often the last two places you've been don't even show up at all!
The solution is to periodically go into Settings/Applications and clear the data for Maps. That will retain your "starred places" but clear the recent places data. That way you'll always have the last 8 or 10 or whatever the limit it since you cleared the data (mine is currently showing 8 prior addresses, but I cleared it yesterday.
