Google privacy question

As I understand it, Google will not be collecting information on searches etc unless the user is logged in to a Google account. I have a gmail account on my phone. It is set up with a username and password which the phone remembers. My question is this:

• Does this constitute being logged in?
• If so, can the account be removed,
• and what would no longer be accessible if I did that.

Any and all related discussion would be very helpful.
