How private are Google Talk messages on the Sprint Evo? Is there any way to retrieve them once they're deleted?

That really depends on your settings with GMail/Google Talk.

Look to see if you can find the chat. If you can, then you were/are chatting "on the record," if you can't find the chat you're looking for, then you were/are chatting "off the record."
