Can you take a screenshot of an example (and edit out private data if needed)?
There is typically an overflow/menu button in the top right which will include options to see recipients and I assume you could tap on one from there to respond to a contact individually.
Another option would be to download a text messaging app from the Google Play Store. You don't NEED to use the one that comes with your phone. One example of an incredibly popular text messaging app is Textra SMS:

Give that a try and if it fixes your problem, SWEET! If not, maybe you can try some others or maybe the problem is something other than the app itself.
