I am a new user from Iphone land. I would like to group like applications in order to create more space on my phone. How do I do that on the samsung?

Put one app on another and that will create a folder with both apps in it. You can add more apps to that folder. So you can have a folder for music apps, one for video apps, etc.
Or you can just add more homescreens. With some launchers (and you're not limited to the one that comes with the phone), you can have 8 or 9 screens.
