Has anyone had any success ditching physical payments altogether using Android Pay?

Android pays list of stores is limited.

I know a whole country where one pay for just about anything using a smartphone, and not be using cash or credit/debit cards at all.

Pretty much yeah, anywhere that accepts contactless cards accepts Android and Apple pay. Not a place in Melbourne that hasn't taken it for me, except for the rare cash only pop up store
