Root Help! I've had a brainfart

Hi all!

I have a Galaxy SIII (I9300) rooted. I wish to update to 4.3 and need to reset my flash counter and unroot. I have searched and read a few different tutorials from a few different forums and now I'm putting coffee in with my tea, totally confused. I'd really appreciate some super-simple instructions on how to reset my flash counter, unroot and finally upgrade to the latest stock firmware without losing the data stored in phone memory? I will love you forever, cheers!

I am using Superuser and when I attempt to use Triangle Away it tells me I must use SuperSU. When I try to install SuperSU I get an error saying 'Incompatible update'. Help

So I got sick of farting around and manually backed up some files and then did a factory reset. I'm going to update via Kies, but my device status is still 'Modified'. Any chance of this coming back to haunt me?
