i have no wifi which is what the kies feature asks for... is it possible to just copy and paste or drag and drop existing files to the phone?

First thing you need to do is take your phone out of Kies mode. On the S I think it's under menu>settings>wireless & networks>usb settings. change it to ask on connection or mass storage. Then when you plug in the phone it will connect to your PC (or Mac) as a flash drive. You just copy files that way.
