Root Help with flashing custom ROM, Please Help

I am new to all of this so any help is appreciated.

Trying to flash to Serendipity on my Samsung Galaxy S that had 2.1 and has been updated to 2.2 and rooted.

What steps do I need to take to accomplish this. I know there are several threads of this already but they all seem a little different. I need to know the simplest way since I am new to this. Also, do I need to flash back to 2.1 first.

i have flashed both serendipity and fasty using the videos over at mobiletechvideos.com

there is a 3 part youtube video tutorial on how to flash (they use cm) but i followed their directions and had no problems.

there are probably easier ways to do it, but this worked for me.
 
Is rooting even necessary? The instructions at the weebly site are very vague and need to be redone. My Captivate came with 2.1 but I used Kies to upgrade it to 2.2. I'm sick of the lag and want to try Serendipity 7 but need some more information.
 
here is my case, may or may not work for your situation... but its good to know on future searches

i went from rooted stock 2.2 to Cyanogenmod7 on a captivate i897

i had to make nandroid and copy that to my local hard drive.
then i did a factory reset
then wipe dalvik
then wipe cache
then i flashed the custom kernel with speed mod i think it was (sorry at work)
then i flashed a stock rooted 2.2 rom from XDA forums how to guide using ODIN
i then put the phone on download and copied the CM7
then i flashed clockword using heimdall....
without rebooting i then went ahead and choose zip and flashed CM7

what happened is that i spent 4 hrs making or not making mistakes when i tried flashing CM7 per their website... it was boot looping while trying to read the zip package... so when i flashed it after installing clockwork WIHTOUT rebooting, it worked fine... all is great now...
