Oh oh oh!! I just checked the Google Photos app and they are on there!!!!! How do I know for sure they are backed up?

Sometimes there is an option to not format the sdcard partition, so keep an eye out for that.
go to photos.google.com on your computer. If they are there, they are backed up.

Anything you think is important. Sounds like you were most concerned about your pictures, and you found those.

okay. yeah that was the most important.
I know my videos are backed up as well, so make sure you have that turned on in settings for Photos on your phone.

Its been turning on with the Samsung logo for a few minutes now.

It asks me If I would like to restore apps and data. Should I?
Worst case if it goes bonkers again you can reset and not restore on the second attempt. Glad you got it sorted.

All my photos were in the Gallery. They must have been backed up on my Samsung account. I'm happy. Now to customize the settings and download all my apps again.
