For big apps, go into Settings - Applications, and choose those apps. Since you should be on Gingerbread, you can click each app and select "Move to SD Card". Keep in mind, sometimes these apps run a little bit slower once moved to the sd card.
To install exclusively, I'm not sure how to do it on stock, but I know many custom ROMs allow this ability.
