If you are trying to send a text with more than 160 characters it will either only send the first 160 or send it in separate messages if it is someone using the same carrier

As an experiment, try downloading a third party SMS app from the Android Market like Handcent. Set Handcent up and then try sending text messages using it. If it successfully sends messages of similar length then you'll know that the issue is a product of your stock SMS client.
