Rooting is gaining administrative access to the Android system similar to jailbreaking in the iOS ecosystem. It allows you to change things and control things that would beyond normal user control. It is also a little dangerous in that without proper understanding it is possible to compromise the operating system rendering some or all features of the device inoperable.
