Is the lousy audio quality on playback (through the earphone jack into a HQ audio system, or headphones) a function of the app or of the little mic inside the Eris?
Its definitely the app. The stock one compresses the audio as much as possible to save space. There are plenty of better ones on the Android marketplace. The mic on the Eris isn't actually that bad for what it is. Its more along the quality of your average headset.
I use Hertz for a good amount of my sound recording needs. Its pretty barebones though. All it does is record the audio and save the output. But since it records to lossless, the sound quality is very good. However, since they aren't compressed at all, the files are HUGE and take awhile to save (a 3 minute recording took about a minute to process).
