You can remove apps and widgets that you do not want individually (and likewise add).
If you really want to set it back to the default I guess you could select your launcher app in Settings > Apps (> All if you are using the built-in launcher) and then using "clear data" for that app. What app you are looking for depends on what launcher you are using, or if you are using the stock one which came with the phone, what phone model you have and what OS version (as different manufacturers give different names to their launcher apps, which are sometimes not obvious - HTC have used "Rosie" and "Prism" for example).
If this isn't what you want, could you post again and explain more explicitly what you want to do?
