Help How do I reformat and reinstall Android

Hello folks,
I have a generic phablet, which I own outright. I like it, but I want to update Android and change the way that the manufacturer set the partitions up. Does anyone know of a way, or know of a sight that has resources, to completely reformat, repartition, and reinstall Android?

Basically, I'm looking for the methods that they use in the factory to set devices up.
I'm not even remotely a noob, with computers/computing, Windows, or Linux, so I'd appreciate it if people would skip the condescension. I'm simply unfamiliar with Android itself, and am looking for resources to get myself familiar enough with it so that I can manage my device the way that I want.

It's already rooted, by the way.

Well it's not quite the same as Windows. Your device will have a factory reset option in the settings menu, which will clear out all user data and restore it to its original state with the existing firmware and Android version.
There are two ways to update to a newer version of Android- one is if the manufacturer of the device releases an update that either installs automatically by being pushed to it or manually by going to their website and downloading it, or by installing a custom ROM since it's rooted. For the latter, a developer would have to have created one for that specific device.
If there is a dedicated forum for the particular tablet you have then you might be in luck so go look there. However if there isn't, which is often the case with the generic/cheaper devices, you're pretty much SOL.

I actually am a developer... mostly for Windows, but I work with C/C++, C#, Java, PHP, etc...
I set up Android Studio last week, and have been reading up on some things. Do you know of any resources that talk about developing custom ROMs?
 
Your post gave me the hint that I needed about what to search for ("custom ROM"). I've found Android Kitchen and Cygwin on the xdadevelopers forum, so thanks again!
 
Cool. Good luck mate and make sure you read everything if it's your first rom (especially making a nandroid backup before flashing)
