How do you highlight a text field?

Is there an easy way to highlight a text field, such as an address bar, once text is already in there? Usually in an address bar in a browser on a PC, when you click on it the entire field automatically highlights.

However, with a phone, merely the cursor gets placed right where you touch with your finger. I noticed triple tapping sometimes works, but it seems so cumbersome and doesn't always work.

Is there some easy shortcut to doing this?

Thank you! If you don't mind, I just have one more question. When you long press and that menu of options shows up above it, what do the two icons to the right of the scissors do? Those are copy and paste, respectively?
