Help how many deleted texts can be restored

Police are searching my phone for deleted text messages. Does anyone know how many can be recovered? Keep in mind that I text a lot. I know that files are replaced and overwritten but does anyone have more information on this?
 
All messages can be recovered and available to law enforcement, because your carrier has a record of all messages sent and received on your number. Police, FBI, etc. only have to go to your carrier with a warrant, if they can't find them on your phone AFAIK.
