It doesn't start over. You have 30 days from the initial purchase to make a decision as far as I know.
Beware with AT&T on warranty exchange. They reserve the right to exchange with a refurb phone and not a new one.
This is my first experience with AT&T (I have been on the three other major players in the US). I've never experienced such terrible call tracking and such a disappointing phone. I've had a cell phone since 1997, and used them in five countries and tens of states, BTW.
I had a better experience with a $20 phone in Honduras and Guatemala than I do from my house on open space and within sight of a tower.
My new Captivate comes in today. If the WiFi and GPS don't work, they are both going into the mail and my 30 days is over. I'll wait for the HTC Glacier on TMobile.

According to the at&t corporate store that I bought mine from, I am on number 3 and they told me I have 30 days from yesterday. The contract for service starts the day of your original purchase.Well I've had five (I think? hard to keep track lol) of them now so I think you should be good.
Does the 30 days start over each time you exchange the phone?
Well, if indeed I am using the same towers on my Nokia 5800 with T-Mobile and the Captivate, that must make the phone hardware itself more of a differentiator.
New marketing slogan:
"Captivate: more sucktastic than you thought!"
or
"Galaxy S: gorgeous screen, geolocation and calling optional"
:-D
