how to change default app?

i know u have to go to application to clear default but that option is grayed out
how do i make my new app the default app?

When you go to clear the defaults, you need to go to the old (current default) app and clear it, not the new app. I just wanted to clarify this because I can't tell from your post if you are looking in the right place. It it's grayed out, it means there are no defaults set for that app.

What type of app?

You need to perform an action that launches the type of app that you want to set as default. If you've cleared the defaults for the old app you'll then be presented with the list of apps of that type and the option to set your choice as default.
