You can use a home replacement app like launcher pro, zeam launcher, adw launcher, etc etc (search the market for launcher, you'll see a lot). These give you A LOT more options than the stock launcher, and for most people, run smoother/faster than the launcher the phone comes with. My personal recommendation is Launcher Pro, but zeam is nice and quick, and minimalistic, ADW is nice, but for me, slower than LP.
Launcher pro lets you put 5 things in your dock, and lets you have up to 3 docks (for a total of FIFTEEN applications) and they can be anything you like. You can even use custom icons (pictures from the web, or your computer, etc). If you want to get fancy, you can even set up swipe actions. For example, if I click on my phone icon, it pulls up the dialer, but if I swipe on my phone icon, it shows me my missed calls. If I swipe my browser, it opens a popup with my bookmarks for me to pick from, when I swipe music, it launches a playlist, etc etc.
Benefits of launcherpro also include the ability to hide apps from your app drawer (for example, I put most of my apps on my home screens, and then hide them from my drawer, so I don't have to sort through them when I'm looking for one of the few apps that I don't keep on a home screen). Launcherpro gives you the ability to auto-rotate your homescreen to the portrait position without opening your keyboard (small perk, but nice). You can change the number of homescreens you have (up to 7), and even change the number of columns and rows on your homescreens.
