Root How to install a new ROM?

I installed Cyanogen Mod 7 a while back and I haven't gotten used to it. I don't really care for it too much so I want to install MIUI. I'm confused about how to do it (I suppose I don't understand the vocabulary or the processes as well as I thought I did). Can someone explain how to safely remove CM7 and install MIUI?

So I tried installing MIUI 2.11.9 from roms.miui.us. My procedures were:

Charging phone to 100%
Confirm that the md5 was the same
Booting into CWM
Performing a backup
Clearing data, cache, and dilvik cache
Installing from the zip card

but when I did this, I got an error message saying

"symlink: some symlinks failed
E:Error in rom location/miui.zip
(Status 7)
Error flashing zip..."

Then it aborted. I tried clearing the cache again but no luck. I was able to restore from the backup but I'm still kind of unhappy with CM7. I tried finding the solution on the net but I couldn't. Has this happened to anyone before?

make sure you are running the latest version of CWM recovery
 
I booted into CWM Recovery and it says it's running v5.0.2.0. It appears that its really out of date but I can't seem to find how to properly update it. Everything I find has to do with ROM Manager, which according to the Play Store, is up to date.
 
The file isn't found in the OP. One user said:

"Mark is no longer developing this rom, so his post will likely remain out-dated until a moderator fixes it.
To get the latest MIUI rom (2.9.7), you can use Rom Manager, or follow this link http://roms.miui.us/"

but that was in Sept. of 2012.
 
I don't have to flash MIUI. I just want a ROM that works and is stable. My biggest grievance with CM7 is that I cannot send picture messages without manually turning on 3G. Do you have a suggestion for another ROM that works well with my dinc?

i've seen a few people post that they have been running the "touch of blue" rom for the Incredible. The last ROM i flashed on mine was a jelly bean rom, but I did it just to see how it worked, I don't use my Incredible as a phone anymore and I rarely turn on it on ( only to experiment).
