It's best to use the unlock pattern feature for the screen. That way intruders can't even bring up the home screen, let alone go into an app or a folder.

I'd suggest securing the device itself either with a lock pattern, PIN or password. IIRC there are apps to secure other apps but I don't think there's anything to lock at the message level -- particularly for whatever messaging app you happen to be currently using unless the messaging app already includes that feature.
