Welcome to the Android Forums!

First off go into the app drawer. Click on the Settings icon. Within settings click on Applications and subsequently manage applications. Here you'll be able to see what applications are installed outside of the phones actual firmware. IF you find an unnecessary app here you can uninstall it by clicking on the app and then subsequently on uninstall.

If the apps you wish to install aren't here then there's a good chance that they are part of the phones firmware image. To delete them is somewhat more involved and risky. You'll have to attain superuser status on the phone (i.e., root access). Then you can freeze the apps using Titanium backup or uninstall them from the phone. This can sometimes be risky as update images from many phone manufacturers now look at the entire firmware image to make sure it's not changed before an update can be installed. If you root the phone and modify these files you might need to restore the files and unroot before installing an OTA update.
