My problem is not a typical one. What happens with my s5 is that I frequently go fishing near the canada u.s. border (I live in canada) and although I still have bars from my home network, my s5 insists on switching over to a u.s. network every time. I would still like to stay on the home network.... how do I prevent the s5 from roaming altogether (ie. Not just data).

One sure way would be to speak to your carrier and ask them to disable it from your account. Obviously if you later want to use the phone abroad you have to remember to get it enabled again before you need it.
Or you could try going into your network menu and selecting your home network manually (rather than let it select preferred networks automatically). That's less reliable, and certainly would need redoing after each reboot, but might work.
