Why in Task manager there is 340 ram total and not 512? does the android use the other ram? Why when my phone is in idle it uses 150ram.
Is it worth to upgrade to 2.3, does it give more performance?

Yes definitely. 2.3 is a HUGE improvement over Froyo in terms of performance.

I find something strange, on my SIM card i had like 50 contacts, but when i insert it to the phone the galaxy doesn't see any contacts. If i want to save a contact, after a poweroff the contacts are gone, why is that?

512 is the total rom phone has, but the phone does use some for the the system.
Also the app you do use will take some ram.
Also dont stare att the free ram. its only waste to have to much free ram.

2.3.4 does give you some boost, but dont expect to much with stock firmware.
If you want more speed you need to use custom rom and kernel.
