There is a thread on here about peoples top 10 apps, go search for that and read through it and then if there is anything specific you want ask away.
I downloaded a task killer but uninstalled it after a few days as I could not see the point as Android will always restart them. Get Start up Auditor from the market and use it to disable the apps you dont want to start up reboot your phone and them apps will never run again and it wont let you do anything to stupid like blocking the OS from working so you wont break your phone and if you dont like the 3 home screens then try ADWlauncher or Helix Launcher which will allow upto 7 home screens
Oh and make sure you get Xperia FlashLight app it gives you a widget on the desk top to turn the LED on the back of the phone on and off and it works very well and much better than just turning the Screen to white.
And if you really want to pimp it then root it

It's in this section (Experia X10) of the forums so just keep reading down through all the threads and I'm guessing it will be on page 2 or 3 by now. Who know by going through them you will find answers to questions you never knew you had
