Please go to the appropriate "All Things Root" area above and read the "S3 All Things Root Guide" thread stuck at the top of each. This tells you all you need to know.
If your phone doesn't have an appropriate "All Things Root" go into the closest one to your model. You can still read the "What is root" link and "Root terminology" just PLEASE DO NOT FOLLOW ROOT INSTRUCTIONS if its not your model.
In a way it's sort of the Android equivalent to jailbreaking an iPhone, but with much more options. Rooting is basically opening up the whole OS and filesystem so that you can make any changes you want to the system. Things like changing the kernel (which acts as a medium between hardware and software), changing the entire look of the software, installing custom ROMs (such as Cyanogenmod) which give added features, and running root only apps (such as ones to block ads, to backup your apps and the system) If you don't like something on your phone, you can modify it or change it to something different
The dangers are things like deleting or changing something that shouldn't be changed, or installing a kernel (for example) that isn't compatible and you can mess your phone up pretty bad. It's pretty hard to do nowadays but it can happen
