is it possible to update my newly rooted G1 on firmware 1.0 directly to a higher build like 2.0, or do i have to go thro' the whole flashing process, im not a tech minded guy so i dont have a clue, thanks

Welcome to the Android forums!
Unfortunately, it's impossible to up[date the Dream without flashing a new ROM. Latest official version is 1.6, you can flash Android up to 2.2, for example from here (or any other custom ROM for HTC Dream) :
