I'm currently running the CM 7.1 Stable Release with the stock kernel, and I'm looking into changing my kernel. Does anyone know what the use of a new kernel is, or have a custom kernel that they would recommend?

Incredikernel is quite popular for the DInc. It's fast and smooth, and improves optical joystick functionality a bit on the DInc (unless you use the joystick to change homescreens in LauncherPro, you may not notice that, though).

If I understand the matter correctly, the kernel is the core part of the firmware that directly interfaces with the hardware. I'm no expert though.

I have been using Incredikernel too. Works great. Though, so does the stock kernel that comes with Cyanogen.
