How come the N7 doesn't have the Google Now launcher? I thought that was the pure Android way. I updated to 5.0 by flashing the factory images. What am I missing? Is anyone else wondering this, too?

Google now launcher is google, the launcher included is the aosp launcher. Aosp is android open source project. Google now launcher is easily installed from play store.

So why do the N5 and N6 come out of the box with the Google Now launcher anyway, while the N7 doesn't?

It may have it in the next update. 5.1 or 5.0.1. Bug fixes.
I only said it that way because the op said " I thought it was pure android ". I was just pointing out the difference between pure android and pure google. Then letting them know its in the play store.
