Life after phone?

(I realize I may be opening myself up to flames by saying this. It's my first post here. Please be gentle.)

I'm considering a phone with... uh... a different operating system. Once the SIM is out and I'm all transferred to another device, would I be able to keep using my HTC One S as if it were a tiny WiFi-only tablet?
