Galaxy Nexus - and just about every other Android device - will get laggy over time since system memory becomes full of... stuff. Huge call log, thousands of texts, etc. Installing a ROM will not fix this permanently, since you DO use the phone and it will get laggy again at some point.
There is a fix: a factory reset. Is it a pain? Yep. All your homescreens, apps and app data are wiped, as well as all settings and user data. It basically takes the phone back to the way it was out of the box.
Avoiding this, you can use apps like Cache Cleaner and SMS Cleaner to empty out old information no longer needed. Deleting a huge call log will help free up system memory as well. Good luck and I hope this helps.
