Hello! Welcome to AF 
So when you are in your messaging app, there is no option to "Add to Contacts" ? Can you longpress on the phone number in your messages, and choose that option, or does it not appear?

Hmm, stock messaging app I assume? If you do not have the option of long-pressing, then I'm not sure short of either manually entering the contact, or using a different texting app such as Textra:
