Is an unlocked Moto X CDMA capable of being used on both verizon and sprint? Or another way, what other carriers besides verizon can an unlocked Moto X be used on?

Since there's no SIM-lock on a CDMA phone, it can't be SIM-unlocked.
CDMA phones can be used on the carrier that has that phone's IMEI in its database. That's how "locking" is done in CDMA.
If the phone was Verizon, and not used on a no-contract plan, it MAY be acceptable on some of their partners. I don't know if Sprint accepts their phones on any operator but themselves.
