My phone is turning on the camera app, sometimes just by moving the device. Is there any way to turn that thing off? it's getting tiresome now and then...

If you are running Jelly Bean ...
- Did you do a Factory Data Reset after upgrading from ICS?
- If you did you could try running in Safe Mode (disabling all apps you added without uninstalling them) and if the problem stopped it is caused by an app that you added.

Yes. It will delete the data and all apps that you added. It should not be entered into casually. It is highly recommended that it be done after any major system upgrade because really odd things can start to happen over time that have no explanation.
You could try Safe Mode first but the results will be inconclusive.
As was pointed out it could be a hardware issue.

What do I need to do the factory reset... I think it was like turning it off and on with a set of keys...

Reset
To reset your phone to factory settings and erase all the
data on your phone, touch Apps > Settings >
Privacy
> Factory data reset > Reset phone.
Warning:
all downloaded apps and user data on your
phone will be deleted. Data on your memory card will not
be deleted.... Thom
