I've tried a number of different encoders to enable me to watch videos on my X10 and one of the best I found is XMedia Recode.
It's freeware and by selecting the Motorola Milestone profile you get a great looking video with a resolution of 854 x 480. Theres plenty of options to tweak further for those who want to and better still it is the fastest app I've found for encoding

To compliment the great encodes I use mVideoPlayer (available from android marketplace) which is a simple but very effective player with a user friendly UI...in fact I like it so much I fronted up a more than reasonable $3 for the ad-free version which you can get by emailing the creator.
