Help Need help with K-9 mail

I'm using K9 for my work IMAP email via VPN. I'm trying to figure out how to:

1) Set it up so ONLY headers download initially. That way I can delete spam and junk quickly.
2) Keep the last 30 days worth of emails on it.

What is the difference with polling folders and push folders?
