I just got my S5 earlier this week and noticed that Netflix only streams SD video to my phone, no matter what connection I use.
This video has an embedded bitrate and resolution stamp on it and I have no issue getting HD on my Windows 8 PC, iPhone 5S, or iPad.
If you search on netflix for "Example Short 23.976" you should be able to play the same video I'm using for testing. I can't post a link to it since I'm a new user, but it's somewhat disappointing only getting 720x480 video.
