Welcome to the Android Forums!
If you go directly into the email or text messaging applications you can define default ringtones for these individual apps. You can also go into the People app and define specific ringtones for specific people. If your phone will not recognize an audio file you loaded onto your phone for use as a ringtone, sometimes you can get by this by defining this particular file as the default ringtone first. I've been able to do this using a file manager app and using ringtone apps from the Android Market.
