Root New to Droid X - need rom advice

Picking up a used Droid X for use on Verizon's network.

Need recommendations for good stable everyday-use roms. What's the latest version of Android that has such roms? Gingerbread? Honeycomb?

I'm coming from a CyanogenMod rom on my Sprint Hero, so all else being equal, I'd probably use a CM rom on the DX just due to familiarity.

Another issue - can I set up the new rom with just wifi access? I'm switching service providers and wanted to set up the DX before I do the carrier switch.

Just got the DX. I'm wondering if I can do anything with this phone prior to activating it with a carrier. It seems the first (and only) thing it will let me do is make a call to activate the phone. Is there any way to bypass this so I can play with the phone and set up a custom rom prior to activation?
