Help Nexus 7 email app

First post here. I hope I'm just overlooking something simple.

I have a Nexus 7 and am happy with it except for one very frustrating thing. The stock email app automatically deletes all emails when they are removed from the server, whether Sync is enabled or not. I've tried every combination of settings I can find, but nothing changes this behavior.

I want to be able to receive emails from my pop3 account on the Nexus 7 with the option of keeping some emails for future reference. When I receive email on my home computer, I have it set to remove emails from the server. At that point all email disappears from the Nexus 7 too. In other words, it doesn't allow me to save any emails to the Nexus 7. It seems to be syncing with the email server even when I have it set not to sync. I've tried "starring" the emails I want to keep, but as soon as the emails are downloaded on my home computer and removed from the server, they're gone from the Nexus 7 too.

Ironically, the only work around I've found so far is to put the emails I want to keep in the trash on the Nexus 7. So in order to keep them, I have to throw them away. :confused:

My Droid Bionic doesn't work this way with the stock email app. It's such a simple thing - I just want the option to keep selected emails on the Nexus 7. What am I missing? Or is the stock email app really that limited?

I'd appreciate any input. Thanks for letting me vent.

Here's how I have mine set up with my email account(s). My laptop downloads my mail as POP, but all my Android devices including my Nexus 7 sync with my mail server via IMAP. I download my emails to my laptop only about once/twice per week at which time it deletes them from the server. But in the meantime, all my three of my Android devices see all my inbox/sent/deleted mail items because they are synced. I could also set my laptop to do IMAP through Outlook, but I figure that pulling them off the server once/week ensures I'm not letting anything get too old.

Most email servers do IMAP as well as POP and it's no problem to access your mail both ways.
 
Thanks for taking the time to respond. I need to check my email at home multiple times a day, so your method won't work for me. I'm really shocked at how they've taken control away from the user by eliminating the option to keep selected emails on the device. I've searched and found I'm not the only one who's frustrated by that. I guess it's recent versions of the stock email app that is causing the problem and there is no apparent solution.

So... on to other email apps. I'm checking AquaMail right now and it looks promising. It's also cheaper than some of the other paid apps. Maybe that's why Google included the $25 credit with the purchase of N7. That helps cover the cost of a usable email app (excuse my sarcasm, I'm just frustrated).

Hello, thank you for your post, I want to use email in the same way as you but also found this very frustrating. What email package did you end up using?
