Nexus 7 lost emails

Hello! I am a lifelong PC user, now wrestling with my new Nexus 7.
I have two major issues with the e-mail function supplied with the device.
I have amended the settings on my PC's Outlook Express POP e-mail accounts to ensure mail is left on the server for a minimum of 15 days.
I have created four email accounts on the tablet, and successfully receive e-mail. However, here come the problems:
1. Email messages I want to keep are routinely removed from the in-boxes, and cannot be found anywhere. When this happens, I have to reload all the messages from the past 4/5 days, delete all the rubbish (again) and leave the ones I want to refer to back in the inbox. However, in just one or two days, they've gone again!
I have just returned from a two week holiday, when this problem occurred repeatedly. My PC was obviously not active during this time, so cannot be the culprit. I have tried 'starring' the selected e-mails (whatever that means) but it doesn't stop them disappearing. I have read that someone deletes them, but saves them in the Recycle Bin - which is ludicrous!
And so to the second problem/issue:
2. On my PC there is a simple option in Outlook Express to 'Empty Deleted Items Folder' to remove all the rubbish in one click. With the tablet, I have to go through each individual message and click on it, before I can delete them. Surely there is an easier way to delete the entire contents of the Recycle Bin in one go?
Can anyone provide answers/solutions to these problems/issues? Thanks.

Cool, timz. It was fine for you to post the issues here, by the way. :) Many times we're able to resolve things right here in the Intro area. I just thought it would be great for other N7 users to see what you're dealing with, as my N7 knowledge is lacking.
