Help Notification sounds - need direction!

Again, this seems like the most silly question but I can't figure it out!

When I go to settings, sounds, notification sounds I think the sound I am hearing is for when I new email has arrived, correct? Also, are these customizable or am I only able to choose from the stock set?

So how do I set the incoming text sound (and is it also customizable)? I cannot locate it!

UPDATE: I am apparently wrong, the sound I just heard getting a new email was like a little bicycle bell, but I chose Moonbeam as the notification sound. Am even more confused than before.
 
I don't have the Note. However, I have Galaxy S II and assume there are similarities. Here is how it works for me:

When you go to Sounds > Settings > Notifications, that's the default sound. However, you can go to the individual app's settings and choose a tone there.

Hopefully, this will help you figure out what sounds are playing for what app.
 
In case you didn't figure it out yet.
For message: open the message app. touch the menu button(last on the left of phone). touch on settings scroll to bottom and select ringtone.

For emails: open email app. each account can be assign a different ringtone. touch and hold the account you want to edit. touch account settings scroll down and select ringtone.
 
Yes, figured it out as a result of husband getting highly annoyed by the Postman tone. After 15 minutes of searching discovered each email was customizable, which I didn't expect at all. Thanks though!
