Only One Text Message Conversation Listed Out of Order

My list of text conversations with people are all in order by date but there's one text conversation with someone that is in my list that isn't dated (or listed chronologically with the others). It falls to the very end of my text messages with people even though it was the last person I texted and should come first. Is there a setting that can be changed per person that is keeping it from being listed first/in order while the others are already chronological?

No setting that I can think of. I have heard of weird things happening with messaging between Android and iOS
If using the stock messaging app, you could try a different one.
I have been using Textra for several years without any glitches and prefer it over stock.

I read a while back, that if the sender has their messages broken up into 159 character count blocks because of the SMS app settings, that the messages very likely will be received out of order.

In fact, in Textra, if you reading the settings blurb under MMS, it mentions that very thing. It says that IF your carrier does not support MMS and requires short messages, that your long MMS will be broken into smaller blocks. and the intended recipient will most likely receive them "out of order" as there is no guarantee as to what path they take around the planet until they reach the recipient.
different servers having a very busy day, will have a longer queue of messages to send out.

The text messages themselves are coming in order, but when the person is listed with the rest of my texts, the conversation is dropped to the end of the list for some reason.

In other words, when you open text messages on your phone, and you are looking at the list of all of your different text conversations, this one falls to the very end of the list even though it was one of the latest people I've text back and forth with.
