I would love someone to help with this question ..
If someone had a s8 and was using to sims but took one out (as not to get cought) what activity would u see on there google activity page??

You might see activity from whatever app they had set to run at startup, but that would be for any reboot of the phone. Since the sim isn't tied to a Google account, there wouldn't be any activity at all recorded from the removal of a sim card.

Yes that makes sense
The reason I ask is on his google activity it has interacted with android system like 10 times day...
Plus google play services is about the same...
That's every day I have the same phone and I don't do that...

The Google activity page will show you everything associated with your account, not just your phone, so if you are logged into chrome on your PC that will be there. Tablets, smartwatches, Google mini's etc. ANYTHING that you're logged into will show, and sometimes the detail is a little disconcerting because you don't think you did half of the things listed there.

If you are concerned that someone else is accessing your account, the best thing to do is to change your password and enable 2-step verification.
